Staffing
The
number of staff required in such event is determined by the nature and
requirements of the event Lillicrap & Cousins, (2010) point out. As food
and beverages and wine were served at the event, waiters and wine waiters were
required. Each waiter was assigned to serve 10 covers. Lillicrap & Cousins,
(2010) suggest that one waiter should at least serve 25-30 covers in demand for
efficiency work or job. Bowdin, Allen, O’Toole, Harris, & McDonnell, (2012)
states that in incident the event requires the service of casual staff, they
should report well in advance at least an hour before so that they complete
mise-en-place, allocating them to duties and to be updated on the processes to
be carried out. The event organizers called the casual staff the day before the
event, duties were allocated to them and were briefed on the procedures to be
carried out.
